Apple Pie (Easy)

I love seasonal cooking and wanted to take advantage of all the gorgeous apples I've been seeing at the store. Plus, I'm not much a fan of fruit, so what better way to work it in my diet than by putting it in a pie and topping it with a big scoop of ice cream?

Ingredients

9"store bought pie crust (not the kind in the freezer section, but the refrigerated pastry dough)
6 Granny Smith Apples peeled and sliced thinly
1 cup sugar
2 tablespoons all purpose flour
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 lemons
2 tablespoons butter cold

1. Peel and slice apples

2. Squeeze the juice of 2 lemons over apples
3. Mix together sugar, flour, cinnamon, salt and combine in a large bowl with all the apple slices.

4. Place bottom pie crust in pie dish. Pour in apple mixture. Dice butter into little pats and place over apples.

Unfortunately, I forgot the butter. It was very sad. Butter is always better, but if you are trying to be health conscious while making pie, I can tell you that it was still good without the butter.

Last step (which I don't have a picture of, sorry) is to place top crust on and cut 4 small slits in the center of the crust so the pie can ventilate. Sprinkle a little extra sugar and cinnamon on top if you have time and don't forget like me.

*You are probably thinking...Why would I trust this woman's recipe when she keeps telling me all the things she forgot and left out of hers?

I will tell you...because the pie was still good despite the forgotten ingredients. So I can only imagine how great it would have been with them.

And if you have made it this far in the process....bake at 350 degrees for 40 minutes!

It is delish...and kind of healthy if you think of all the apple you are eating.

But you know what is even sweeter than pie....

He sat up for the first time this weekend, and we are all pretty excited about it!

That's my boy.

Yummmmm. I love apple pie! It is a lot of work to slice those apples, but the finished product is so worth it. I will have to try your version soon. Also, congrats to Stephen Small for sitting up! He's getting so big!

we found brown sugar ice cream to put on our apple pie this fall. yum yum. your pie looks great.

the first time I read this I somehow missed Stephen Small! That is the best expression! The pie looks delicious, I have a bunch of granny smiths sitting in my fridge too.
