Avocado Salsa

I don't know what I like best about avocados, the color or the taste. Stephen Grande swears I buy them just to dice them up the way I learned on the food network. Regardless of why I love avocado, I find myself incorporating them into as many meals as possible. Can't get enough.
So.... when I found my mom in the kitchen yesterday making this salsa I took over and claimed it as my own.

It is an avocado lover's dream.

6 tomatoes diced
6 avocados diced
6 green onions diced
1 small can black olives drained
1 small can green chilies drained

1/3 cup vegetable oil
2 teaspoons vinegar

Toss first 5 ingredients together then pour over oil and vinegar. Finish off with a little salt and pepper. Serve with tortilla chips.

*I think a little cilantro and jalapeno would be great in this too.

And If you need help dicing avocados, I'm your girl.

We have the BEST avocados in California. They are picked right off the trees -- ripe or almost ripe -- and delivered to farmer's markets.

They are great in salads with fried chicken bits and honey mustard dressing!
