Split Pea Soup

I've been trying to eat up everything in my freezer and pantry. It is a fun challenge for me...to make a decent meal out of what we have. So yesterday when the rain (and baby) kept me from making a trip to the grocery store, I had to get resourceful. Luckily I had some of the ingredients to make split pea soup. This soup is one of our favorites! Its so simple, delicious, and healthy. I promise it is SO good. You really should try it. Don't let the green color discourage you.


There are numerous recipes for this soup. It's good with ham, carrots, & potatoes in it. I usually make Ina Garten's (Barefoot Contessa) recipe, Parker's split pea soup. You can find it on the food network website. What I made last night is the simplest version.



1 tbs olive oil
1/4 cup onion
1 tsp minced garlic
5 cups chicken broth (I used water and added chicken bouillon)
8 oz dried split peas

Heat olive oil in pot on medium heat. Add onions, saute until translucent. Add garlic. Then pour in chicken broth and dried peas. Bring to a simmer/boil for 45 min with lid off. STIR FREQUENTLY!!!

Add more water (if needed) to bring to desired thinness.

Serve with a little sour cream (if you have it) and garnish with green onions or fresh parsley(if you have it).

Ida Garden! This looks delicious, I despised split pea soup as a child, I need to give it another whirl.

hm. i would never ever think to make this... ill have to give it a go..i imagine with some toasted saltines or garlic break it would be yummy too... and your husband likes it?
