Chicken Fingers!

We had homemade fried chicken fingers and honey mustard tonight. The picture below really doesn't do the meal justice. Like all new recipes, this was an experiment. The one thing we would have done differently is cut the chicken tenders into smaller pieces. This would help the chicken cook faster and not make the batter turn so dark. Recipe is as follows:

Three large chicken breast cut up into chicken tenders

1 1/3 cup flour
1/4 teaspoon salt
1/4 teaspoon pepper
2 teaspoons baking powder
1 cup milk
1 egg beaten

Mix all ingredients together and dip chicken in batter. Throw in deep fryer and cook at 350 for about 15 minutes (maybe a little less, use your own judgment).

Honey Mustard

No specific measurements, just mix 3 ingredients to taste the way you like it.
